Pineapple Salsa
This Pineapple Salsa recipe is a VERY refreshing snack or appetizer for the summer! Fresh ingredients make all the difference during this incredibly hot season in Alabama! Not to mention how healthy it is - full of fruit and veggies!

Pair this salsa dip with your favorite tortilla chips and enjoy! Recipe is below!!
I N G R E D I E N T S:
For the dip:
3 cups of chopped pineapple
1 diced red pepper
1 diced green pepper
1/2 chopped red onion
Pinch of parsley
Lime zest from 1 lime
(Optional chopped seedless jalapeño - if wanting a little more heat)
For the dressing to whisk together before adding to the dip:
Lime juice from 2 limes
1 tablespoon of olive oil
1 teaspoon of honey
1/2 teaspoon of ground cumin
1/2 teaspoon of salt
D I R E C T I O N S:
Add chopped pineapple, red pepper, green pepper, red onion, and parsley to a medium bowl
Whisk together the lime juice, olive oil, honey, cumin, and salt
Pour the dressing mix over the fruit and veggies in the medium bowl and mix well. Cover and refrigerate for up to 24 hours before serving
Serve with your favorite tortilla chips! (I love to use the Late July Sea Salt Multigrain tortilla chips.)
