Lemon Chicken Tomato Penne Pasta

- 2 Skinless Boneless Chicken Breasts

- 1 container of grape tomatoes

- 1 lemon

- 1 tsp minced garlic

- salt

- pepper

- 1/4 cup grated Parmesan cheese

- 2-3 cups of whole wheat pasta

-cook the pasta according to box directions

- while pasta cooks, chop the chicken into bite sized pieces. toss in a bowl with a splash of olive oil, a pinch of salt and pepper, and any other seasonings you like (I like to use italian seasoning)

- cut grape tomatoes in half

- zest the lemon, cut in half, and save the juice

- grate 1/2 cup of parmesan cheese

- in a pan over medium high heat, cook the chicken 3-4 minutes. Add the garlic to the pan and stir it in for about 30 seconds

- add the tomatoes, pinch of salt, half the juice from the lemon, and half the zest to the pan with the chicken. Let the tomatoes cook down and chicken cook completely. 4-5 minutes

- add the grated cheese and cooked penne pasta until everything is fully mixed
